No Bake Cheesecake

You never know what will happen when you make a comment on social media. The night before Thanksgiving I made a comment on a very popular content creator’s post. She was considering a last-minute Thanksgiving and I offered my no bake cheesecake recipe.

I was flooded with DMs and comment requests for my recipe, so I am sharing it with you. 

As many of you know my middle kiddo is allergic to cow milk and eggs (and my whole house is allergic to or intolerant of gluten). Between these allergies and my severe soy (my daughter’s mild soy) allergy and a few others… holiday cooking is a juggling act.

But my cheesecake is never difficult or stressful and it is VERY adaptable.

You can use dairy free or regular cream cheese and heavy cream. This is the exact same recipe that I used before the swap.

The base recipe is great by itself. I make a cookie crumble for the bottom by mixing crushed Simple Mills Thins and butter. I spread that on a cookie sheet and bake for 15 to 20 minutes.

Depending on the flavor profile I am looking for I use Honey Cinnamon, Lemon, Chocolate Brownie or Chocolate Mint.

For Thanksgiving I added ¾ a cup of Pumpkin Puree, cinnamon, clove and nutmeg and replaced half the powdered sugar with sifted brown sugar.

Here is the recipe.

No Bake Cheesecake

  • 3 containers of vegan cream cheese (softened)
  • 1/4 - 1/2 cup powdered sugar
  • 2 cups country crock plant based cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon vanilla bean paste

Whip half the sugar into the cream until stiff peaks form. 

Set aside.

Whip the cream cheese, the rest of the sugar and all the vanilla. 

Once the cream cheese mix is soft add the whipped cream in and beat together. 

Refrigerate for an hour. Boom. Done.

Additions

Just like blending in pumpkin, you can use cocoa powder. I have done mint chocolate with a few drops of peppermint and layered that with brownies topped with whipped cream and crushed peppermints (great for Christmas). Macerated strawberries layered with vanilla cake and whipped cream (a summer treat). Cherries cooked with vanilla and sugar… the possibilities are endless.
